One of my favorite kitchen tools is my crock pot and one of my all-time favorite chicken recipes is Rosemary Crock Pot Chicken. Enjoy
One 3-4 lb whole chicken, rinsed, with giblets removed
Six sprigs of fresh rosemary, plus a few more sprigs for garnish
One tablespoons extra-virgin olive oil
Two cloves garlic
One small to medium onion, coarsely chopped
Salt and pepper to taste
Spray the inside of crock pot with non-stick spray.
Rinse whole chicken, cutting away extra fat and removing giblets, etc.
Stuff chicken with three rosemary sprigs, peeled garlic cloves and chopped onion.
Pour oil over the chicken and rub it all over the chicken.
Salt and pepper outside of chicken and place chicken in the crockpot.
Add three additional sprigs of rosemary and onion to the crock pot, tucking them under and around the chicken.
Place the lid on the crock pot, set on low and cook for about 7 hours.
